Update platformio.ini to exclude unused modules from t1000-e (#6584)

* Update platformio.ini to exclude unused modules
* Add No EXT GPIO flag and also correct some exclusions in main
* CANNEDMSG != CANNEDMESSAGES
* Remove NO_EXT_GPIO
